You can elevate your classic grilled cheese to a gourmet grilled cheese in just a couple of minutes and a few simple ingredients! We believe that bacon makes everything better and this recipe is no exception. This sandwich pairs perfectly with a bowl of warm tomato soup in the winter and is an excellent way to use fresh basil and tomatoes from your garden in the Summer. This recipe is a favorite because it's simple, perfect for every season, and is absolutely delicious!

Ingredients

  • 2 Slices of artisan sourdough bread

  • Shredded or sliced, aged cheddar cheese

  • Shredded or sliced Monterey Jack (or similar) cheese

  • 6 Basil leaves

  • 3 Slices of bacon, cooked

  • 2 slices fresh tomato

  • 2 Tbsp of mayonnaise (inside and outside)

  • 1 Tbsp butter

  • Splash of Olive Oil (to prevent butter from burning)

  • Sliced red onions (Optional)

Directions

  1. Cook 3 slices of bacon in skillet until crisp. Set bacon aside and remove bacon fat. Add the butter and olive oil to the warm skillet.

  2. Spread mayonnaise generously on each side of the sliced bread. The mayonnaise on the outside will make the bread crispy as it cooks and the layer on the inside will add flavor.

  3. Assemble the sandwich by layering the aged cheddar cheese, basil leaves, 3 slices of bacon, tomato slices, and Monterey jack cheese, and optionally the sliced red onion on the slices of bread.

  4. Place sandwich in the preheated skillet and cook on each side for about 2 minutes or until golden brown. Cover with a lid while cooking to allow the cheese to melt evenly.

    Enjoy!

German Pancakes with Warm Berry Compote

German Pancakes with Warm Berry Compote

There’s something wonderfully simple about a plate of homemade German pancakes. They’re thin, tender, and lightly crisp around the edges, less fluffy than an American pancake and perfect for stacking, folding, or topping with whatever you have on hand. For this version, we’re keeping things classic: a simple, lightly sweetened pancake cooked in butter on the Lancaster No. 8 Griddle, then topped with a warm berry compote made with fresh lemon and a touch of vanilla.

Classic Cherry Skillet Pie with Red Wine

Classic Cherry Skillet Pie with Red Wine

This is a classic cherry pie at heart: a buttery, flaky crust, plenty of juicy cherries, and a sweet-tart filling that bubbles into the crust as it bakes. The little twist is a splash of red wine in the filling, it doesn't overpower the cherries, but adds a subtle richness and brings out their deeper, almost jammy flavor. Baked in cast iron, the crust turns beautifully golden and crisp while the filling bubbles around the edges.
